Smoked Salmon Alfredo, Paired with Pinot Grigio

Ingredients
- 1/4 Onion, Chopped
- 1/4 cup Butter
- 1/2 lb Smoked Salmon, Chopped
- 1 Pint Heavy Whipping Cream
- 1 Tomato, Diced
- 2 tbsps Chopped Fresh Parsley
- Ground Black Pepper to Taste
- 12 ozs Penne or Linguine or Fettuccine Pasta
Directions
- Boil 3 quarts of water
- Add pasta choice and return to a boil
- Cook uncovered approx 10-12 minutes or until pasta is tender, stirring occasionally
- Remove from heat and drain pasta
The Sauce
- Saute onion in the butter in a pan until clear
- Add the Salmon and Saute at medium to low heat for approximately 2 more minutes
- Very gradually, start to add the cream, stirring constantly until thickened
- Sauce should be very thick once you have added the cream
- Pour sauce over the Pasta
- Top with tomato and parsley and season with pepper
